So many people have asked which brand of Mexican vanilla I use, and where to buy it. At cookbook printing, Orlando Mexican Vanilla had become difficult to find, but happily is easily available once more online!
This is a small, family-run business and I've used their wonderful vanilla for the entire 15 years that I baked professionally. And I would use nothing else for my personal baking! I use the dark vanilla, btw. Click on this box and you'll go right to their website:
I am embarrassed to say that the sheet cake pan I've always used and thought of as a "1/4 Sheet Pan" is not technically that. My sheet cake pan is neither a 1/4 nor a 1/2, but an in-between size. Please make a note on the Devil's Food Sheet Cake recipe, page 79.
The baking sheet pan size that I use is 11x15x2. I use a simple Wilton brand pan and these are available at Michael's and on Amazon.
Thankfully, the recipe will work in a 9x13 pan, with a bit of extra baking time (and extra batter!).
